The illuvial horizon is enriched in metal oxides on drier sites, and in organic matter in more humid ones, with the presence of Humic Podzols (referred to as Cryaquods or Humods in the US Taxonomy) with high organic carbon relative to Fe on wet sites (Sanborn et al., 2011). With the addition of some organic matter, the light texture and open structure of sandy soil is good for growing many varieties of vegetables and flowers, and is well suited to annual root crops, especially potatoes (Solanum tuberosum). Water drains so quickly through sandy soil that it washes away most of the nutrients. Sandy soils cover about 273 million ha in Africa, and SOC rarely exceeds 10 g SOC kg− 1 in the top 30 cm. A well-managed plantation yields about 4–6 tonnes of fresh rhizomes per hectare. The plaggen soils of Western Europe have high SOC (up to 66 g kg− 1) due to the long-term additions of sod, litter, manure, and sea sand to increase the soil fertility.
